RECIPE PREPARATION Enchiladas with chicken:
Cut the chicken breast into strips and season with salt, pepper and paprika and place on the grill. While the meat is browning, prepare the red sauce. Preparation Enchiladas with chicken
- If you don't have ready-cooked chicken, chop the onion and minced garlic, and cut the chicken breasts into large slices. Put them all fried in a tablespoon of oil, seasoning only with salt and pepper. When the chicken is brown on both sides, take it out of the pan and cut it into thin strips. Discard the remaining onion and garlic.
- Sauce: chop the onion and minced garlic and cook until soft. Add the finely chopped tomatoes and the canned ones crushed with a fork. Leave it on the fire for 5 minutes, it should not drop too much. Season with salt, pepper and 1 tablespoon of Mexican mixture. If you want faster you can add chili powder, half a teaspoon, until it is to your taste.

For the dough you need: 220g butter, cold, diced (82% fat), 300g white flour, 1 pinch of salt, 180g sour cream (20% fat).
Combine the butter, flour and salt in the food processor bowl and beat until the composition is sandy. Add the cream and beat a few more times until you get a smooth dough. If the dough looks too fluffy or doesn't stick, add another tablespoon of sour cream. Transfer the dough to the work table and gather it in a ball, taking care to knead it as little as possible. Wrap the dough in cling film and refrigerate for 2 hours.
For the filling you need: 2 tablespoons vegetable oil, 1 chicken breast, finely chopped (or the equivalent of minced chicken), 1 green onion, 2 cloves garlic, a few mushrooms, 2 hands fresh spinach, 1 hand parsley, salt and pepper to taste. You will also need an egg for greasing and poppy seeds, sesame or black cumin for decoration.
Chop the onion, garlic, mushrooms, spinach and parsley. Heat the oil in a pan and add the chicken breast. Saute for a few minutes then add the green onions, garlic and mushrooms and keep on the fire until all the ingredients are fried. Season with salt and pepper to taste and add the spinach and parsley. Remove from the heat and allow the filling to cool completely before using.
To form the pies, place the dough on the floured table and spread a thin sheet of 3-4mm. Cut dough circles using a cookie cutter or improvise with a small plate. Put 1 tablespoon of filling on each circle of dough then grease the edges with beaten egg. Join the edges of the dough to form the pies and seal the dough by pressing it with a fork. Place each pie on a tray lined with baking paper and grease with beaten egg. Sprinkle with the desired seeds and bake at 200C for 10-15 minutes or until they grow nicely and turn golden.
Chicken Enchilada Soup
1. Put a large pot on medium heat, cook the chicken breast in oil until well browned on all sides. Remove and set aside.
2. Cook the onion and garlic in the remaining oil until the onion is translucent. Add the chicken soup.
3. In a bowl, mix the flour and 2 cups of water until smooth. Add to the pan, with the remaining 1 cup of water, enchilada sauce, cheddar, salt, chili and cumin. Let it boil.
4. Cut the cooked chicken and add it to the pot. Reduce heat and simmer for 30-40 minutes, until thickened.

3. Roll equal amounts of tortilla mixture. Arrange in a bowl. Cover with taco sauce of 3/4 cans of Cheddar cheese. Bake uncovered in the preheated oven for 20 minutes. Cool 10 minutes before serving.
